Vodka as a pasta sauce is a thing. It helps the cream and tomato base meld together without actually imparting the vodka flavour. It also seriously brings out the tomato flavour of the sauce.
Ingredients:
- 500g penne pasta
- 4 cloves garlic, finely chopped
- 3 shallots, finely chopped
- 25g butter
- 2 tablespoons olive oil
- 1 cup vodka
- 400g passata or tomato purée
- 1 cup cream
- 1 teaspoon chilli flakes
- Salt and freshly ground black pepper
- Grated parmesan and fresh salad, to serve
Method:
- Cook pasta according to packet instructions.
- Sauté the garlic and shallots in the butter and oil over medium heat until golden.
- Remove from heat and carefully add the vodka.
- Return pan to the hob and cook for a few minutes, then add passata.
- Stir until combined and reduce heat. Add the cream, stir and simmer on low heat.
- Season with salt and pepper. Drain pasta, add to the sauce and toss to combine. Serve with grated parmesan and a seasonal side salad.
