Serves 4-6 as entree
Bruschetta is an antipasto hailing from Italy and consists of grilled bread rubbed with garlic. You can play around with different variations of the topping. We love anchovies on this variation, but, if they are not to your taste leave them out, or serve them on the side for other people to add if they like. Try this for your next get together and get your guests mouths watering.
So simple and so tasty.
Ingredients
- 1 baguette, sliced diagonally in 2 cm slices
- Good quality olive oil
- 2 cloves garlic, peeled
- Selection of 3-4 ripe heirloom tomatoes, thinly sliced
- 1 large ball buffalo mozzarella, roughly torn
- Handful of fresh basil leaves
- Anchovies (optional)
- Flaky sea salt and black pepper
Method
- Turn oven to grill.
- Drizzle sliced baguette on both sides generously with olive oil, and grill carefully in oven, turning once, until golden on both sides.
- Remove from oven and rub toasted baguette on top side with raw garlic clove.
- Layer first with sliced tomatoes, then pieces of torn mozzarella and basil leaves.
- Season with salt and pepper.
- If you love anchovies, add an anchovy fillet on top.
