Minty Avo & Grape Salad

 

This salad is so zingy and refreshing. It’s an ideal topping for curries, salads or anything Mexican. Or just eat it with corn chips.

Makes 4 1/2 cup serves

Ingredients

  • ½ cup red seedless grapes quartered
  • ½ cup green seedless grapes quartered
  • 1 red chilli seeded and finely diced
  • ¼ cup red onion finely diced (around ½ red onion)
  • ¼ cup mint finely chopped
  • ¼ cup coriander, finely chopped
  • ¼ teaspoon salt
  • 1 teaspoon oil
  • 2 tablespoons lime juice (around 1 lime)
  • 1 cup avocado diced (around 1 avocado)

Method

Put all ingredients (except avocado) into a bowl and mix well. Mix in the avocado gently at the end (to avoid damaging it) and place carefully into a serving dish.
