This salad is so zingy and refreshing. It’s an ideal topping for curries, salads or anything Mexican. Or just eat it with corn chips.
Makes 4 1/2 cup serves
Ingredients
- ½ cup red seedless grapes quartered
- ½ cup green seedless grapes quartered
- 1 red chilli seeded and finely diced
- ¼ cup red onion finely diced (around ½ red onion)
- ¼ cup mint finely chopped
- ¼ cup coriander, finely chopped
- ¼ teaspoon salt
- 1 teaspoon oil
- 2 tablespoons lime juice (around 1 lime)
- 1 cup avocado diced (around 1 avocado)
Method
Put all ingredients (except avocado) into a bowl and mix well. Mix in the avocado gently at the end (to avoid damaging it) and place carefully into a serving dish.
