Guacamole with tequila-soaked mango

Mexican -dip -and -chips

Serves 4-6

Nothing quite beats a good guacamole, and although originally created by the Aztecs, it now screams ‘modern day Mexican’. Use this with the delicious homemade tortilla crisps, and put a good dollop on top of your Mexican chilli beef. The tequila-soaked mango is for that little something special.

Ingredients

  • 1 mango, peeled and diced
  • 3 Tbsp tequila
  • 2 ripe avocados
  • 3 Tbsp finely chopped red onion
  • 1 red tomato, diced
  • 2 Tbsp sweet chilli sauce
  • 1 red chilli, finely diced
  • Juice of 1 lime
  • Juice of ½ or 1 lemon
  • Handful of coriander, roughly chopped
  • Salt and pepper

Method

  1. Mix together diced mango and tequila. Cover and refrigerate for at least 1 hour.
  2. Mash avocado and add remainder of ingredients, finally seasoning with salt and pepper.
  3. To serve top with extra coriander and mango-soaked tequila.
