Serves 4-6
Nothing quite beats a good guacamole, and although originally created by the Aztecs, it now screams ‘modern day Mexican’. Use this with the delicious homemade tortilla crisps, and put a good dollop on top of your Mexican chilli beef. The tequila-soaked mango is for that little something special.
Ingredients
- 1 mango, peeled and diced
- 3 Tbsp tequila
- 2 ripe avocados
- 3 Tbsp finely chopped red onion
- 1 red tomato, diced
- 2 Tbsp sweet chilli sauce
- 1 red chilli, finely diced
- Juice of 1 lime
- Juice of ½ or 1 lemon
- Handful of coriander, roughly chopped
- Salt and pepper
Method
- Mix together diced mango and tequila. Cover and refrigerate for at least 1 hour.
- Mash avocado and add remainder of ingredients, finally seasoning with salt and pepper.
- To serve top with extra coriander and mango-soaked tequila.
