Serves 6 as nibbles
There is not much to say about this gorgeous dish except yum! The smell of these cooking alone will entice a gathering of hungry people nagging you asking how long until we can eat it. They will be gone as fast as you can serve them. These flatbreads are great as a afternoon snack, a pre-dinner nibble, or a late night munch.
Ingredients
- 4 cloves garlic, finely chopped
- 2 tsp fennel seeds
- ⅓ cup good quality olive oil
- 4 pita breads, halved horizontally
- 50g shaved parmesan
- Your choice of freshly chopped herbs to serve (optional)
Method
- Turn oven to 180°C.
- Mix together garlic, fennel seeds and olive oil.
- Slice pita breads in half horizontally and place on a flat oven tray.
- Evenly spread and drizzle the olive oil mix on top of the breads.
- Top the pitas with the shaved parmesan.
- Bake for 18-20 minutes until golden.
- Remove from oven and randomly chop.
- Sprinkle with fresh herbs.
- Demolish.
