Serves 6
A Mexican feast is not complete without something crisp, golden and deep fried! These crisps are so easy to make and are a real crowd pleaser. You will never have enough to satisfy as these little morsels are addictive.
Ingredients
- 1 1/3 cup milk
- 3 Tbsp canola oil
- 3 cups all purpose flour
- 2 tsp baking powder
- 2 tsp salt
- 4 cups canola oil
- Flakey sea salt
Method
- Pour milk and 3 Tbsp oil into a small saucepan and heat until warm.
- Mix flour, baking powder and salt into a bowl and pour the heated milk on top.
- Mix together with your hands to form a dough.
- Knead dough for 3-4 minutes.
- Cover with plastic wrap and rest for at least 15 minutes.
- Divide dough into 12 even portions.
- On a lightly floured surface roll out each portion into circles as thinly as possible with a rolling pin.
- Cut into triangles, you determine the size.
- Pour 4 cups canola oil into a heavy based saucepan and place on medium heat.
- Heat to 170 degrees or until a piece of bread becomes golden in a minute.
- Add tortillas in batches and cook until golden, turning as needed. They should only take 2-3 minutes to cook.
- Drain on paper towels, seasoning with salt.
