These three ingredients love each other no matter which way you stack them. Try sticking them on skewers for a tasty vegetarian kebab option, or simply mix together in a salad bowl with your favourite summer salad dressing. Not a feta fan? Try making this with halloumi instead for a squeaky cheese delight.

INGREDIENTS:
- 2 small red onions
- 1 pack cherry tomatoes
- 2 packets feta cheese
- 2 courgettes
- Juice of 1 lemon
- Fresh herbs, to garnish
METHOD:
- Preheat barbecue or grill on medium heat.
- Finely slice the red onion and cook, moving to the side once it starts to caramelise.
- Place cherry tomatoes on the grill and cook, turning often to avoid burning.
- Slice feta or halloumi cheese horizontally, to create two flat rectangles.
- Using a peeler, create thin courgette slices. Grill for a minute on each side – just long enough to soften and create grill marks. Once courgettes are soft, place feta rectangles on a plate or board, and top with a few grilled red onions.
- Make a cross shape with your courgettes over the top of your cheese and onion, add the tomatoes and the remainder of the onion, and top with a drizzle of olive oil and your favourite fresh herbs.
- Serve immediately.
