Once you’ve tried these, you’ll be making them as often as you can! Ready in 30-50 minutes (depending on campfire/bbq heat).

INGREDIENTS
- 1kg small potatoes, quartered
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon fresh herbs (oregano, thyme, rosemary – whatever you have)
- Salt & freshly-ground black pepper
- 130g tasty cheese, grated
- 130g mozzarella, grated
- Chilli flakes, to garnish
METHOD
- Heat barbecue to medium heat.
- Cut 4 large pieces of foil (about 30cm long).
- In a large bowl, toss potatoes in oil, garlic powder, herbs and salt and pepper. Divide evenly between foil pieces and seal each foil packet so potatoes are completely covered.
- Place foil packets on the barbecue and cook until potatoes are almost soft (around 15 minutes).
- Open packets, and sprinkle cheese evenly between each packet. Close packets again and cook until cheese is melted (about 5 minutes).
- Top with a little more salt and pepper and chilli flakes to serve.
