This easy granola recipe made with Black Honey is a hearty granola you can change up as you prefer. If you don’t have hazelnuts and walnuts, try pistachios or almonds. Don’t like dried cranberries? Try raisins, dried apricots, or dried apples. It makes about 1.2kg of granola, including the cup of cornflakes stirred through at the end to stretch it out a bit. Prepare it on the road or make a batch at home before your trip to take with you for a delicious breakfast (or snack) option.

Ingredients
- 3½ cups rolled oats
- 1½ cups roasted hazelnuts, roughly chopped
- 1 cup walnut pieces (or halves, roughly chopped)
- 1 cup pumpkin seeds
- 1 cup coconut chips
- ½ cup packed brown sugar
- 1 teaspoon kosher salt
- ½ teaspoon ground cinnamon
- ½ teaspoon ground cardamom
- ½ cup extra virgin olive oil
- ¼ cup Black Honey
- ¾ cup chopped dried cranberries (or dried apple, etc.)
- 1 cup cornflakes (optional)
Method
Preheat the oven to 150°C. In a large bowl, combine the dry ingredients. Mix well, ensuring there are no lumps of sugar. Add the olive oil and Black Honey and mix well. Spread onto a large-rimmed baking sheet in an even layer and bake for 10 minutes. Take out to stir well, then bake for another 10 minutes until golden brown and toasted. When cooled, add the cranberries and cornflakes, tossing to combine.
