MAKES/SERVES: 12-14 PIECES | PREP TIME: 15 MINUTES | SET TIME: 2-4 HOURS
Ingredients:
Base
- 1½ cups rolled oats
- ½ cup melted coconut oil
- 2 Tbsp cacao powder
- 1½ Tbsp maple syrup
Vanilla layer
- 1½ cups soaked cashews
- ⅓ cup melted coconut oil
- 2 Tbsp maple syrup
- 1 tsp vanilla essence
Caramel
- 1½ cups soaked dates
- ½ cup almond milk
- 2 Tbsp maple syrup
- 1 Tbsp tahini pinch of salt
Chocolate
- 100g dark chocolate, melted
- ¾ cup coconut cream
- ½ cup chopped peanuts
Method:
- Place dates in a medium bowl, cover with boiling water and leave to soak for 30 minutes.
- Line a slice tin with baking paper.
- Using a food processor or stick blender, blend all base ingredients together until smooth then pat into the bottom of prepared tin.
- Blend all vanilla layer ingredients together until smooth and pour on top of the base layer.
- Set in the fridge for 1-2 hours.
- Blend all caramel layer ingredients until smooth and pour on top of the vanilla layer.
- Set in the fridge for another 1-2 hours.
- Combine melted chocolate with coconut cream and chopped peanuts.
- Mix through peanuts and pour on top of caramel layer.
- Slice with a warm knife and eat!
