Make the most of this beautiful summer stonefruit’s flavour by giving it a little love on the barbecue or grill. The heat really brings out the flavour and caramelises the sugar, leaving you happy as a clam.
- 4 ripe peaches
- 20g butter, melted
- Runny honey
- Vanilla ice cream
- Fresh thyme leaves
- Preheat the barbecue or grill on medium heat.
- Cut peaches into halves (or quarters if you prefer), remove the stone and brush the cut sides lightly with butter and a little honey.
- Place on the grill and cook, turning once, until you can see char marks.
- Serve immediately with more honey, some ice cream dollops and fresh thyme.
