Honey Grilled Peaches & Ice Cream

Make the most of this beautiful summer stonefruit’s flavour by giving it a little love on the barbecue or grill. The heat really brings out the flavour and caramelises the sugar, leaving you happy as a clam.

SERVES 4

INGREDIENTS:

  • 4 ripe peaches
  • 20g butter, melted
  • Runny honey
  • Vanilla ice cream
  • Fresh thyme leaves

METHOD:

  1. Preheat the barbecue or grill on medium heat.
  2. Cut peaches into halves (or quarters if you prefer), remove the stone and brush the cut sides lightly with butter and a little honey.
  3. Place on the grill and cook, turning once, until you can see char marks.
  4. Serve immediately with more honey, some ice cream dollops and fresh thyme.
