Surely one of the simplest desserts, these can be made in a frying pan or on the barbecue. Add a dollop of ice cream or a swirl of caramel sauce to really take this devilish delight to the max!
1 can pineapple rings
20g butter, melted
Handful fresh mint and/or basil
Heat frying pan or barbecue grill to medium heat. Mix melted butter and the juice from half a lemon in a bowl, and add a little freshly chopped basil and/or mint, reserving some whole leaves for garnish. Grill pineapple, brushing regularly with butter and lemon mix. Turn pineapple often and brush each time until you’ve used all the liquid. Serve pineapple rings with fresh herb leaves.
