Get-on-your-bike muesli slice

Makes approximately 12 bars Muesli slice/bars and scroggin are a staple to add to your backpack when going on adventures because it is nutritious, lightweight, high in calories, and easy to store. This is a super easy and healthy way to make your own flavoursome muesli slice to throw in your backpack or add to your lunchbox. This goes down a treat when we are out exploring. You can easily make variations and substitutions to your taste. Recommendations include dark choc chips, chopped dried apricots, pistachios, cashews, and flax seeds.

Ingredients

  • 125g butter
  • ¼ cup brown sugar
  • ¾ cup golden syrup
  • 1 tsp vanilla extract
  • 1 cup muesli (your favourite)
  • 1 cup rolled oats
  • ½ cup desiccated coconut
  • ¼ cup sunflower seeds
  • ¼ cup pumpkin seeds
  • ¼ cup chia seeds
  • ½ cup dried cranberries
  • ½ cup sultanas
  • 1 cup self-raising flour
  • ½ tsp cinnamon
  • 3 Tbsp sesame seeds

Method

  1. Heat oven to 180°C fan bake.
  2. In a medium pot, melt butter with brown sugar, golden syrup, and vanilla. Heat for approximately three to four minutes until it becomes frothy.
  3. Add all other ingredients in a large bowl (minus the sesame seeds).
  4. Pour the warm frothy liquid over the dry mix, mixing it together well with a wooden spoon.
  5. Grease a sided oven tray with butter (we used a non-stick tray approx. 20cm x 30cm x 4cm height).
  6. Transfer the muesli mix into a tray, pushing down for even coverage.
  7. Sprinkle three tablespoons of sesame seeds over top of slice, pushing down gently.
  8. Bake in middle of oven for approximately 15 to 20 minutes
  9. until golden.
  10. Remove from the oven and allow
  11. to cool.
  12. Refrigerate for at least an hour and then tip out of the tray and cut to your desired size. Voila!
