Creamy Coconut Chia Seed Pudding

Chia seeds pack a nutritious punch and are extremely versatile. Serve this pud for breakfast or dessert.

Ingredients

  • 1 cup coconut milk
  • 1 cup almond or other plant milk
  • 2/3 cup chia seeds
  • 2 tablespoons brown rice malt syrup or liquid honey
  • 1 tablespoon vanilla paste
  • 3 tablespoons desiccated coconut, lightly toasted fruit and nuts, to serve

Method

Mix the milks, add the chia seeds and set aside for 10 minutes, allowing them to absorb the liquid. Warm the malt syrup (in a microwave for 15-20 seconds or in a pot over low heat), then stir in the vanilla paste and coconut. Add to the chia seed mix and stir until it’s lump-free. Cover and refrigerate till it becomes like a jelly. For breakfast, serve with seasonal fruit, a sprinkle of nuts or even a tablespoon of nut butter. For a dessert, spoon over a mix of dark berries and cocoa nibs.
