Cacao Nib Bliss Balls

Makes 12

Ingredients

  • 3⁄4 cup pitted medjool dates or dried dates
  • 1⁄2 cup ground almonds
  • 1 tablespoon coconut oil or nut butter
  • 1⁄2 cup cacao nibs
  • 1⁄2 cup sultanas
  • 1⁄2 cup dried cranberries 1⁄4 cup desiccated coconut

Method

If using dried dates, soak for about 15 minutes in warm water, then drain. In a food processor, blend the dates, ground almonds and coconut oil or nut butter. Add cacao nibs, sultanas and cranberries. Blend until well combined and a desired texture. Roll mixture into bite-sized balls and roll in desiccated coconut. Put bliss balls on baking paper and chill in the fridge for half an hour.
