Serves 4 prep and cook time 30 minutes
Ingredients
- 30g butter
- 2 (300g) brown onions, chopped finely
- 500g beef mince
- 1 egg, beaten lightly
- 2/3 cup (50g) fresh breadcrumbs
- 1 tablespoon Worcestershire sauce
- 1 tablespoon extra virgin olive oil
- 4 slices (75g) cheddar cheese
- 4 brioche burger buns
- 4 small butter lettuce leaves
- 1/3 cup (90g) tomato relish or chilli jam
- 75g dill pickles, sliced
- 2 small (180g) tomatoes, sliced
Method
- Heat butter in a large frying pan over medium heat. Add onions, cook, stirring, until golden and caramelised (about 15 minutes). Cool.
- Combine the beef mince, onions, egg, breadcrumbs and Worcestershire sauce in a large bowl. Season with salt and freshly ground black pepper; mix well. Form mixture into four patties.
- Heat oil in a large frying pan over medium-high heat; cook patties, turning once, until just cooked through. Top patties with cheese during the last minute of cooking and allow the cheese to melt.
- Toast the cut sides of the buns. Divide lettuce, patties, relish, pickles and tomato among bun bases; sandwich with bun tops.
Uncooked beef patties suitable to freeze. Not suitable to microwave.
Make your own patties:
You can also make your own beef patties using a ratio of using a ratio of 400g meat to 100g fat. Keep the meat as cold as possible while working to maintain a nice, coarse texture and to prevent it from going mushy.
