Ingredients
- 1 cup self-raising flour
- ½ teaspoon baking powder
- ¼ teaspoon salt
- ½ cup grated tasty cheese
- 1 teaspoon dried oregano leaves
- 1 egg
- ½ cup milk
- 60g butter, melted
- 2 x 50g sachets pizza sauce
- ½ medium red capsicum, chopped finely
- 1 stick (100g) cabanossi, sliced thinly
- 12 pitted kalamata olives
- 1/3 cup grated tasty cheese, extra
Method
- Preheat oven to 200°C (180°C fan-forced). Grease and line a 30cm x 20cm (base measurement) slice pan, extending paper over long sides.
- Sift flour, baking powder and salt in a medium bowl. Add cheese and oregano. Make a well in the centre of mixture. Whisk egg, milk and butter in a small jug; pour into flour mixture. Using a large spoon, gently fold together until just combined. Spread into prepared pan.
- Cover top of muffin mixture with pizza sauce. Top with capsicum, cabanossi, olives and extra cheese. Bake for 20 to 25 minutes or until golden.
- Stand in pan for 5 minutes, then turn, top side up, onto a wire rack to cool. Cut into slices to serve.
Notes
- Top with any of your favourite toppings — pineapple, salami, ham, artichokes or cherry tomatoes.
