Ingredients
- 1 quantity pizza dough, quartered
- olive oil spray
- 2/3 cup barbecue sauce
- 1½ cup mozzarella
- ½ cooked barbecue chicken, meat removed and chopped roughly
- ½ Spanish onion, sliced finely
- 180g creamy smoked cheese, crumbled
- 40g baby rocket leaves
Method
- Preheat oven to 230°C/210°C fan-forced. On a lightly floured surface, roll out 4 balls of dough into rustic rectangles. Lightly spray trays with oil and place 2 bases on each tray.
- Spread barbecue sauce over each pizza base, leaving 1cm border. Sprinkle bases evenly with mozzarella, then scatter over chicken, smoked cheese and onion.
- Cook for 25 mins until bases are cooked and cheese is golden.
- Remove from oven, scatter with rocket, and serve immediately.
