5 mins preparation | 25 mins cooking | Serves 4
Ingredients
- 2 tablespoon olive oil
- 3 medium-sized onions, sliced
- 2 tablespoon honey
- 2 tablespoon balsamic vinegar
- salt and freshly ground black pepper
- 4 x 120g lean beef steaks, such as sirloin or rump
- olive oil
- salt and freshly ground black pepper
- 8 thick slices wholegrain bread
- baby spinach leaves, to garnish
Method
- Heat oil in a saucepan, add onions and cook over a medium-low heat for 10 minutes until softened but not coloured.
- Add the honey and balsamic vinegar and cook for 10 minutes more, stirring often until caramelised. Season the onions with salt and pepper and remove to cool.
- Heat a barbecue on high. Brush steaks with oil and season on both sides with salt and pepper. Barbecue steaks for 2 to 3 minutes on each side or until cooked to your liking. Set aside steaks to rest for 5 minutes and keep warm.
- Place each steak on a slice of bread and top with a good dollop of honey onions and a few spinach leaves. Top with remaining slices of bread.
