Easy Banana Pancakes

Perfect for breakfast, lunch or even dinner, this is a great way of using up ripe bananas for a sweet snack that’s easy to prepare and even easier to eat!

 

INGREDIENTS:

2 ripe bananas
1 cup flour
2 free range eggs
1⁄2 teaspoon baking powder
1⁄2 teaspoon sugar
Pinch of salt
2 drops vanilla extract
1⁄4 teaspoon ground cinnamon or nutmeg
1 teaspoon olive oil
15g butter
Maple syrup and fresh fruit, to serve

 

INSTRUCTIONS:

First, mash your bananas with a fork in a bowl. Add flour and egg. Whisk with a fork until combined – you’ll end up with quite a thick batter. Add baking powder, sugar, salt, vanilla extract and cinnamon (or nutmeg) and mix. Heat your frying pan, and add the oil and/or butter. When the butter starts sizzling, add your batter using a large spoon. Shape your batter into preferred shape, and turn once when the sides look brown. Serve pancakes immediately with a drizzle of maple syrup and fresh fruit.
