Spiced Apple Cider

This hot cider is a true hug in a glass. Make sure you’re using heatproof glassware! Feel free to leave out the star anise if you don’t like the flavour; a grating of nutmeg is a tasty alternative.

INGREDIENTS

  • 330ml apple cider
  • 50ml clear apple juice
  • 1 stick cinnamon
  • 1 star anise
  • 1 apple, thinly sliced

METHOD

  1. Place all ingredients except sliced apple in a saucepan. Heat slowly over medium heat; do not allow to boil.
  2. When it starts to steam and you can smell the spices, remove star anise.
  3. Pour (through a sieve or muslin if you want it clear) into a heatproof glass.
  4. Garnish with a couple of apple slices and your cinnamon stick and enjoy.
