Technically a Cuban drink rather than Irish, a good mojito is pretty, tasty and definitely ticks the ‘green’ box for your St Patrick’s Day celebrations!
SERVES 2
INGREDIENTS
- 2 limes
- 2 teaspoons sugar
- Handful of mint leaves, plus extra to garnish
- 120ml white rum
- Soda water
- Few slices cucumber, to garnish
METHOD
- Cut 1 lime into rough quarters.
- Muddle lime pieces, sugar and mint leaves in a small jug using a muddler or the end of a rolling pin – make sure you give the mint and limes a good crush!
- Pour into two tall glasses and add plenty of ice. Pour over the rum, stirring with a long-handled spoon.
- Top with soda water, garnish with extra mint and serve.
