Make the most of seasonal figs in this refreshing and super-tasty sparkling cocktail – perfect to start your Easter celebrations! The thyme simple syrup will keep well in the fridge for a few months; try adding a dash to a gin and soda for a super-tasty evening tipple.
INGREDIENTS
For the thyme simple syrup:
- ½ cup white sugar
- ½ cup water
- Several sprigs of fresh thyme (save some for your drink garnish)
For the cocktail:
- 2 fresh figs
- 20ml fresh lemon juice
- 20ml thyme simple syrup
- 50ml vodka
- 50ml cider
METHOD
- To make the simple syrup, simmer sugar, water and thyme leaves for five minutes. Remove from heat and allow to cool.
- To make the cocktail, muddle figs and lemon juice into a cocktail shaker.
- Add a generous scoop of ice, then add thyme syrup and vodka.
- Shake well until the shaker gets frosty, then strain into a wine glass.
- Top with cider, garnish with figs and thyme and serve.
